Tofu Skin Roll
The tofu skin roll is a popular cold dish in Jiangsu and Zhejiang provinces. It is made from tofu skin. And the tofu skin is thin and crisp, which has high requirements on the level of cooking technology and the quality of the skin. How to make tofu skin roll
Tofu skin roll ingredients
• 2 tablespoons soy sauce
• 150g chicken essence
• 1/2 teaspoon salt
• 170g tofu skin
• 1 yam, shelled
• 1 tablespoon sugar
• 1 tablespoon ginger, minced
• 10 green onion,
• 1 pleurotus eryngii, cooked and cut into strips
• 1/2 tablespoon sesame oil
• 1/2 teaspoon Allspice
• 1 tablespoon cooking wine
• 150g chicken soup
Tofu skin roll instructions
1. Heat a wok, add chicken soup, soy sauce, salt, sugar, cooking wine, allspice and ginger in the wok and cook it until boiling. Transfer it in a bowl and cool it.
2. Place half of the tofu skin in a large dish and pour half of the sauce on it. Sprinkle 1 teaspoon sesame oil. Cover the other half of the tofu skin on it. And sprinkle the other sauce and 1 teaspoon sesame oil on it. Soak the tofu skin until it becomes soft.
3. Cut the tofu skin into strips of the same width as the yam strips. Place the tofu skin on the plate, put it in a steaming wok with boiled water and steam it for 5 minutes, then take it out and let it cool.
4. Sprinkle sauce on the yam and pleurotus eryngii and mix well. (The sauce that from the tofu skin) And roll each two yam strips and two pleurotus eryngii strips into a roll with tofu skin. And tie it with green onions.
5. Heat a wok with high heat, add the tofu skin roll and fry until it becomes golden. Transfer it on a plate and steamed it in a stemmer under high heat for 20 minutes.
6. Heat the wok with oil, add green onion and the remaining sauce from the tofu skin dripping and stir-fry until fragrant. Remove the green onions and add starch. Then sprinkle it on the tofu skin. Serve.
