How to make pork tofu

INGREDIENTS
· 400g firm tofu, drain and slice
· 1 bitter gourd, sliced
· 250g pork belly, minced
· 2/3 teaspoon salt
· 2/3 teaspoon sugar
· 1 tablespoon ketchup
· 1/2 bowl corn starch
· 1 tablespoon cooking wine
· 1/2 tablespoon dark soy sauce
· 1/2 tablespoon light soy sauce

INSTRUCTIONS
1. Boil about 1 L of water with 2 teaspoons of salt and cook the bitter gourd for 2-3 minutes to bring out the bitter flavor. Then transfer it in a bowl with cold water.

2. Mix the pork belly, cooking wine and ginger in a bowl. Marinate it for a while.

3. Heat a wok with oil, and fry pork belly for a while. Add dark soy sauce, light soy sauce, sugar and salt. Transfer it on a plate and set aside.

4. Heat a wok with oil, stir-fry the tofu a few times. Add the bitter gourd and continue to stir-fry it. Add pork belly and stir-fry for a while. Season it with black pepper, salt and sugar. Transfer it on a plate and serve.
