Curry Tofu

There are many methods to make tofu, however, this home-style curry tofu recipe is one of my favorites!

How to make curry tofu

 INGREDIENTS
• 1 green pepper, minced
• 1 red pepper, minced
• 1/4 teaspoon salt
• 1 (500ml) bowl water
• 2 curry cubes
• 1 (500g) package lactone tofu, drained and cut into 3/4 cubes
• 1 carrot, minced
• 2 tablespoons oil

INSTRUCTIONS

1. Heat 2 tablespoons oil in a nonstick fry wok under medium heat.  Add green pepper, red pepper and carrot then stir-fry.

2. Pour water in the wok and cook until boiling, then add the curries.

3. Stir the curry cubes gently and continue heating under low fire until it is completely dissolved.

4. Add tofu and stir about 3 minutes until the mixture thickens.

Tips:

1. Boil about 1 L of water with 2 teaspoons of salt and cook the tofu for 2-3 minutes to bring out the bean flavor. And add salt to the water to increase the tofu’s coagulation.

2. The curry contains all the good flavors and doesn’t need to add other seasonings when cooking. And the curry could not be cooked for too long time.
